Find something greazy for dinner.

It coats the stomach walls so you can absorb a bit more of the booze you're going to over-indulge in.

I personally go for burgers and fries. Home made of course.

1/2 pound of ground beef/chuck
1/4 pound of breakfast sausage (tennesse pride, jimmy dean, etc)
half slab of bacon.

1 small onion
1 green pepper


Cook your bacon to a semi crispy texture
Chop your bacon, onion, and pepper to a fine mince

Mix your bacon, sausage and veggies together with your ground beef/chuck.

(I prefer to add the seasonings I prefer to the meat at this point)

After everything is mixed together make 3-4 balls of meat out of the meaty mixture.

If cooking on a grill it's best to pre-form your patties. If you're pan frying the burgers you can smash the balls with your flipper as they cook to form the patty.

Top with your choice of cheese, lettuce, tomato, and condiments.

Fries:

Potatoes
Oil (vegetable, canola)

This is easiest if you have a deep fryer, if not, you can also bake or pan fry them.

If you're fortunate enough to have a deep fryer then pre-heat to 350 degrees.
Slice your potatoes to the thickness you like for your fries.
Deep fry for 7-10 minutes or desired crisp.

I top my fries with vinegar and garlic salt.

If you are baking the potatoes then I'd go with 350 degrees in your conventional oven for 45 min to an hour...to desired crisp. Drizzle with oil before and mid way through cooking.

If you're pan frying it can be a little tricky. Coat the pan with oil about 1/8 inch thick. Add only enough fries that can be worked around in the pan. Keep the heat mid level. Not scolding hot. Cook until browned.

Consume with your choice of alcoholic beverage, it's new year's eve.
