I made a couple attempts to get the columns right, but every time I hit submit or save the columns merge?

if you're attempting to use HTML, it won't happen... HTML is disabled throughout the entire board, even at admin level.

Well, I re-typed everything from scratch-no difference. Underlining it made a small difference.

Now I have put characters between the columns, dashes, and it seems to have done the trick.

First of all, that's a great resource for reference.
Second, I've amended your post to include an attachment with an image of the original table - I think you did a great job of using text to reflect the original so don't think it's worth undoing..
