I was messin around with some potato salad ideas for a side with our steaks this evening.

I think I found a winner.

Two large red skinned potatoes
Helman's Mayonnaise
a bit of onion
a bit of green bell pepper (by a bit, I mean however much you want to put in)
BBQ sauce...about a table spoon
6 slices of apple smoked bacon
2 hard boiled eggs

Chop your potatoes up into small cubes. Boil the cubed potatoes to half cooked. You want to have your potatoes still semi-raw for potato salad.

Cook your bacon up crispy.

Chop your veggies finely and itty-bitty enough to blend well with the mixture.

After your potatoes are cooked to the proper firmness soak them in cold water for about 5 minutes while you get the rest of your stuff ready to put in a big bowl of some sort.

Drain the water from your potatoes and put them in the bowl.
Crumble your bacon up in the potatoes.
Add the chopped onion and green pepper.
Crush your hard boiled eggs into the mix.
Now, add your mayo. Mix it in dollup by dollup until you have the texture you like. Add your BBQ sauce and continue mixing.

Put the bowl of fun-town potato salad in the refrigerator for an hour or so, or until cold.
